California nears becoming first U.S. state to require restaurant allergen disclosures
California’s Senate Bill 68, also called the Allergen Disclosure for Dining Experiences (ADDE) Act, would require restaurants operating 20 or more locations to clearly identify the nine major food allergens (milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, sesame, soybeans) either on menus or via digital formats (with printed alternatives). The law, if signed, would take effect July 1, 2026. Supporters argue it will make dining safer for millions with food allergies; critics in the restaurant industry warn of increased costs and logistical burden. Read more.

“Pre-Shift Stage Blankets” for continuity
Before each shift, place a lightweight towel or fabric “stage blanket” over each station’s tools and ingredients during setup. As staff prep, they lift the blanket only to expose exactly what’s needed for that task. At shift handoff, the blanket goes back on, protecting the station and giving the next shift a clean “snapshot” of what remains. This minimizes cross-contamination, hidden messes, and confusion about incomplete prep between teams.
